In addition to carefully selected seasonal ingredients from the market, we also use fresh local vegetables from Nara.
For the soup stock, we use kelp from the southern part of Hokkaido, which has a strong flavor, and aromatic honkare shavings from which the blood has been removed, so that you can enjoy both the umami and flavor of the soup.
