We offer “Maki-yaki”, which is also popular in Japan, as a modern and sophisticated innovative cuisine based on French cuisine with a Japanese essence. In the center of the open kitchen where you can enjoy cooking scenery over the counter, we introduced a brick firewood kiln using white clay from Larnage, France. A selection of ingredients not only from Japan but also from the world, using the “Butterfly Flame” that has a variety of possibilities while being primitive, the ingredients themselves are moisturized and the umami taste is condensed. You can enjoy it. Please enjoy a wide range of innovative cuisine such as baking and steaming using a wood kiln and incorporating it into the dessert menu as well as cooking!
