Fuga's courses are packed with attention to detail in every aspect. The appetizer steak tartare is made from the highest grade of red wagyu beef, slow-cooked and paired with caviar, making it one of our signature dishes. The black wagyu beef is sourced from all over Japan, carefully selected by a professional. You can also enjoy plenty of fresh vegetables and mushrooms that change with the seasons. The tofu is made from soybeans from Hokkaido and is handmade in the restaurant every day. The broth is either a special "kelp broth" with a rich and refined flavor, or a "beef bone broth" made luxuriously with beef bones for a rich flavor.
