中国伝統の家庭料理のメニューで人気を集める香港の人気料理家。2011年に香港にて、紹介制のプライベートレストラン「CHOY CHOY KITCHEN」を開業し、“隠れ家レストランの女王”としてその名を馳せる。日本では東京都目黒区青葉台に4席のプライベートキッチンを構え、1日数組の限られたゲストに対しライブキッチンで自ら腕をふるう。少人数ならではの温かなサービスと家庭料理を革新的な中華料理に昇華させたクオリティーの高さが話題を呼び、CNNが選ぶ「香港プライベートキッチン10選」に選出、2019年に初出版したレシピ本は「グルマン世界料理本大賞」を受賞するなど、各国でその実力も高く評価されている。

「校倉(あぜくら)」料理長
吉田 信一(よしだ のぶかず)
1987年には鳥羽にある名門旅館「戸田家別館」にて日本料理の技術を深め、その後、大阪の割烹料理店で副料理長として活躍。外資系ホテルの日本食レストランを経て、97年6月にザ・リッツ・カールトン大阪 日本料理「花筐」に着任、1998年には副料理長に、2009年からは料理長となり活躍する。 その後2020年よりJWマリオット・ホテル奈良 日本料理「校倉」の料理長として着任する、日本の美を料理に表現することを大切にしている、正統派の料理人であり、うまいものを探すことが大好きで、見つけた食材を用い、休日も家で料理の腕を振るうほどの根っからの料理人。
