Le Comptoir: Showcasing the very best of French hospitality
The duo behind the premier French bistro in Vietnam's tourist magnet, Da Nang, is giving diners a taste of the finest food and wine from French culture
When two hospitality professionals, dedicated to their own respective crafts, decided to put up a restaurant in Vietnam, the aim was to give their potential guests a taste of the best their cultural roots had to offer. And, if said roots were French and Italian, they knew they had much to play with and explore.
Le Comptoir in Da Nang, Vietnam's fourth largest city known for its proximity to pristine beaches, is a modern French bistro that combines Chef Olivier Corti's playful franco cuisine with Sommelier Myriam Moretto's wine sensibilities and expertise. Together, Olivier and Myriam create the perfect food and wine pairings that satisfy local and international guests' craving for foreign offerings that are not yet in abundance in the area.
“Olivier opened the restaurant and then I joined him after finishing my professional experience as chef sommelier at the Intercontinental Da Nang,” says Myriam. “That's the main reason why we landed in Vietnam almost seven years ago.”
Meeting of culinary minds
Chef Olivier is from Lyon, the capital of French gastronomy. Like most top chefs, he apparently comes from a family of food lovers. His culinary ambitions started in the kitchen while spending Sundays cooking with his grandmother. As a teenager, Olivier began working at his aunt and uncle’s restaurant where he learned the essentials of French cuisine. A few years later, he honed his skills at a Michelin-starred restaurant in the south of France and continued to explore the culinary world, which eventually led him to Da Nang in 2017.
Myriam, on the other hand, grew up near Milan. As early as 17 years old, she knew she wanted a career in the wine industry to become the best junior sommelier in Italy. After completing her master sommelier program, she relocated to France to deepen her wine knowledge and, later, worked at Michelin-starred restaurants in France, Monaco, Hong Kong, and Vietnam.
“We fell in love with the ambiance of a certain sophisticated restaurant from the French Riviera,” Myriam says of the inspiration behind Le Comptoir's look and feel. “The philosophy behind our place is chic but at the same time warm and very welcoming. Olivier's cuisine is based on his French technique and he always adds a personal touch to the food through some local ingredients.”
As for wines, Myriam says she's focused on boutique ones and showcasing the winemakers that put high-quality spirits while respecting the environment.
“Our best sellers in terms of wines are French labels,” she adds “We do have an international wine selection but I love highlighting unknown brands and letting my customers discover hidden gems!”
“The philosophy behind our place is chic but at the same time warm and very welcoming."
The fun starts at dusk
Le Comptoir is currently a dinner place that opens its doors at 5 p.m., with last orders at 9 p.m. The space has an area for warm and inviting booths with dining tables and chairs, a French-inspired deli, and a chef's counter with wooden stools where guests can have a full view of the goings-on in the kitchen.
“We can seat up to 42 customers. That's why we propose two services: 5 p.m. to 6 p.m., for the first service and the second one from 8 p.m. to 8:30 p.m.,” says Myriam. “Customers can sit and interact with our chefs at the counter. They can also relax and enjoy moments with loved ones, or conduct business meetings.”
The bistro has a five- and seven-course set menu with a choice of additional or premium wine pairings. The a la carte menu consists of small bites and starters as well as meat and seafood mains. Not to be missed are the imported cheese selections, offered in sets of three, five, and seven kinds of fromage. All of this won't be complete without the dessert menu, where chocolate, nuts, citrus, caramel, and matcha are center stage.
